Blended Green Vegetable Soup



Ingredients:

2-3 cups green beans, fresh
2-3 cups zucchini, chopped
2-3 celery stalks, chopped
1/4 bunch parsley
4-8 kale leaves
1-2 garlic cloves

Directions:

Steam the green beans, zucchini, celery, kale over water until soft but still green
Place the cooked vegetables plus the parsley and garlic in a blender and puree until smooth
Add a bit of the steaming water as needed to thin
The broth should be fairly thick
Season to taste with minced ginger, cayenne, vegetable seasoning or herbs of your choice
