Lentils are great for weight loss! Lentils are nutritional powerhouses. One cup of cooked lentils has only 230 calories, making them an good choice for weight loss.

Lentils are high in fiber and can help lower cholesterol and manage blood sugar. This Lentil Picnic Salad is a super healthy and tasty meal.

Lentil Picnic Salad

Prep Time:    5 minutes    Cook Time:    25 minutes

Ingredients:
1 1/2 C LENTILS
2 T OLIVE OIL
3 T RED WINE VINEGAR
3 T finely chopped fresh PARSLEY
1 clove of GARLIC, crushed
1 C CHERRY TOMATOES, halved
1/2 large YELLOW BELL PEPPER
1/2 large GREEN BELL PEPPER
2 GREEN ONIONS, sliced
4 ounces of goat or sheep FETA CHEESE, crumbled
SALT
PEPPER

Instructions:
Cover the LENTILS with 4 inches of water in a large pot and boil until just tender, about 25 minutes.

Drain and cool slightly in bowl.  Add the OIL, VINEGAR, PARSLEY, and GARLIC to lentils and mix well.  Refrigerate until well chilled.

Add the CHERRY TOMATOES, YELLOW and GREEN BELL PEPPERS, and ONION and toss in the FETA CHEESE.  Season to taste with SALT and PEPPER.
