Tomato Gazpacho
Gazpacho is a delicious chilled vegetable soup that is perfect as the weather gets warmer.
Gazpacho can be easy to make, is healthy and very nutritious, and low in fat and calories. Here is a quick and easy version of the Gazpacho recipe. Enjoy!
Tomato Gazpacho
Ingredients:
4 C variety of fresh TOMATOES, chopped
2 C CUCUMBERS, chopped
1 small ONION, chopped
1/2 JALAPENO PEPPER, seeded and minced
LEMON ZEST from 2 lemons
1/2 C WHITE WINE VINEGAR
1/4 C OLIVE OIL
1/8 tsp CAYENE PEPPER
SALT
PEPPER
Instructions:
Combine TOMATOES, CUCUMBERS, ONIONS, JALAPENO PEPPERS, and LEMON ZEST in a large bowl.
Remove 2 cups of mixture and set aside in separate bowl.Transfer chopped ingredients in large bowl to blender and add VINEGAR and OLIVE OIL. Puree ingredients. Add SALT and PEPPER to taste. Pour pureed mixture into a large bowl and add in reserved tomato, mixture. Serve cold.
