Hummus – Food of the Gods!

Hummus is the food of the Gods! Hummus is basically pureed garbanzo beans, also known as chickpeas. They are high in protein and fiber and can be very helpful with relieving constipation. Hummus can be a great snack or appetizer, served with fresh or toasted pita bread. And, even better, Hummus is quick and easy to make at home!
Hummus
Ingredients:
2 C cooked or canned CHICKPEAS (garbanzo beans), drained and liquid
1/2 C TAHINI
1/4 C extra virgin OLIVE OIL
2 cloves GARLIC
1T GROUND CUMIN
1 LEMON
SALT
PEPPER (fresh ground)
Substitution Options:
To add flavor add any of the following: roasted red peppers, olives, pine nuts, or fresh herbs; May substitute paprika for cumin.
Instructions:
Blend CHICKPEAS, TAHINI, OLIVE OIL, GARLIC, GROUND CUMIN, juice of LEMON together, adding more lemon juice or drained chickpea liquid to adjust to preferred texture. Add SALT and PEPPER to taste. Serve with rice crackers or a variety of cut up fresh vegetables.
