Eat Your Spinach! Spinach Salad with Strawberry Vinaigrette
Spinach made Popeye the Sailor strong and it’s a veggie that everyone should eat regularly.
Spinach has awesome cleansing and nourishing properties for the digestive tract, intestines and colon. When properly prepared, spinach is highly beneficial in correcting many common ailments. Dreamy, right?
This spinach salad is super tasty and not sweet at all – but the berries provide bursts of fruitiness which make it delicious and refreshing. The pecans are simply toasted, but once they’re coated with vinaigrette dressing, you’d swear they were candied.
Spinach Salad with Strawberry Vinaigrette
Ingredients
2 1/2 tablespoons strawberry vinegar
3 tablespoons olive oil
5 ounces baby spinach (8 cups)
1/2 pound strawberries, cut lengthwise into thick slices (1 1/2 cups)
1/2 cup pecan halves (3 1/2 ounces), toasted and cooled
Directions:
Whisk together vinegar, a rounded 1/4 teaspoon salt, and 1/8 teaspoon pepper in a small bowl, then add oil in a slow stream, whisking well. Put spinach, strawberries, and pecans in a large bowl and toss with just enough vinaigrette to lightly coat.
