Colorful Quinoa is a Vegetarian Feast



This recipe for Colorful Quinoa is a vegetarian feast!  This particular Colorful Quinoa is packed with flavor, and even better on the second day.

Colorful Quinoa

Ingredients:
1 C QUINOA, rinsed
2 C WATER
1/4 C RED PEPPERS, chopped
1/4 C GREEN PEPPERS, chopped
1/4 C YELLOW PEPPERS, chopped
1/4 C ORANGE PEPPERS, chopped
1/4 C RED ONION, chopped
1/4 C CARROTS, chopped
2 cloves GARLIC, chopped
1/2 tsp CHILI POWDER
1 C organic PINTO or ADZUKI BEANS, drained and rinsed.

Instructions:
Mix all ingredients in a pot, except the beans.  Bring to a boil and then turn down heat to simmer for about 15 minutes,  until most of the liquid is absorbed.  Turn off heat and add the can of beans.
