A Quinoa or Millet Cold Salad is a super source of veggie protein!

Quinoa has been called a “supergrain” because it’s such an excellent source of vegetable protein, which unlike other grains, is not missing the amino acid lysine.Low in saturated fat and high in fiber, quinoa supplies more iron than other grains and contains high levels of potassium and riboflavin, as well as other B vitamins.

Millet is low in fat and a source of vegetable protein and dietary fiber. Millet contains more B vitamins, copper and iron than whole-wheat grains and brown rice.

Quinoa or Millet Cold Salad

Ingredients:
1 C Quinoa or Millet, soaked, rinsed, and strained
2 C VEGETABLE BROTH OR CHICKEN BROTH
3 SCALLIONS, sliced
1/2 C ROASTED RED PEPPER, chopped
1/3 C PARSLEY, chopped
1/4 C FETA CHEESE
3 TBL slivered ALMONDS
2 TBL EXTRA VIRGIN OLIVE OIL
2 TBL RED WINE VINEGAR
1 large CLOVE GARLIC, chopped
S&P to taste

Instructions:
Cook QUINOA or MILLET in rice cooker with CHICKEN OR VEGETABLE STOCK, cool when done.  Add remaining ingredients to cooled grain and stir. Put over greens and serve.
