Lemon Caper Vinaigrette

This light and lovely vinaigrette is great either as a dressing or as a marinade – it’s one of my all time favorites, for sure!

Prep Time:      10 min.             

Ingredients:
1/4 C LEMON, juiced
1/2 tsp raw HONEY
1 clove GARLIC, minced
1/4 SHALLOT, minced
1/4 tsp DIJON MUSTARD
1 Tbs CAPERS, rinsed
1/8 tsp SEA SALT
Fresh ground PEPPER, to taste
1/2 C EXTRA VIRGIN OLIVE OIL

Instructions:
In a shaker bottle, put all ingredients in then shake until mixed.
