Apple and Asiago Cheese Salad

Prep Time:     20 mn.        Cook Time:     8 min.

Ingredients:

4 Tbl OLIVE OIL
3 Tbl BALSAMIC VINEGAR
1 tsp RAW HONEY
1 tsp DIJON MUSTARD
1 Tbl GREEN ONIONS, finely chopped
S & P to taste
5 C organic SPRING MIX
2 APPLES, cored and chopped
2 oz ASIAGO CHEESE, shaved with vegetable peeler
1/2 C raw CASHEWS, toasted

Instructions:

In a jar, combine OLIVE OIL, VINEGAR, HONEY, MUSTARD, GREEN ONIONS, and S & P. Shake well and set aside. In a large bowl, combine GREENS, APPLES, and toasted CASHEWS. To toast CASHEWS preheat oven to 350 degrees put CASHEWS in pie plate and bake for 8 min. or until lightly toasted. Pour dressing over salad and serve.
