This Lentil Salad is a delicious side dish that can be enjoyed the whole year through. Serve it with your favorite dinner entree, share it with friends at your next get together or take it to work for lunch. Any way you choose, this salad is not only tasty but it’s gluten free and packed full of nutritious energy too!
Prep Time: 5 minutes Cook Time: 25 minutes
1 1/2 C LENTILS
2 T OLIVE OIL
3 T RED WINE VINEGAR
3 T finely chopped fresh PARSLEY
1 clove of GARLIC, crushed
1 C CHERRY TOMATOES, halved
1/2 large YELLOW BELL PEPPER
1/2 large GREEN BELL PEPPER
2 GREEN ONIONS, sliced
4 ounces of goat or sheep FETA CHEESE, crumbled
Cover the LENTILS with 4 inches of water in a large pot and boil until just tender, about 25 minutes. Drain and cool slightly in bowl.Add the OIL, VINEGAR, PARSLEY, and GARLIC to lentils and mix well. Refrigerate until well chilled. Add the CHERRY TOMATOES, YELLOW and GREEN BELL PEPPERS, and ONION and toss in the FETA CHEESE. Season to taste with SALT and PEPPER.
