Baked Beet Chips

Prep Time: 15 minutes | Cook Time: 14-18 minutes

Ingredients:
  • 4 medium BEETS, rinsed and peeled
  • 1 TBL AVOCADO OIL, cold pressed
  • 3 sprigs ROSEMARY, fresh, finely chopped
  • 4 sprigs THYME, chopped
  • SEA SALT & PEPPER to taste
Instructions:
  1. Preheat the oven to 350 degrees
  2. Thinly slice the BEETS, place into a large bowl and toss with AVOCADO OIL and HERBS
  3. Place BEETS on a cookie sheet lined with parchment paper, single layer
  4. Bake for 15-18 minutes until slightly browned
  5. Remove from the oven and let cool
  6. If BEETS are still wet after they cool place back into the oven and bake a few minutes longer until dried out
