Bean and Broccoli Soup

Prep Time: 10 minutes | Cook Time 15 minutes

Ingredients:

  • 1 head BROCCOLI, peel stem, slice and cut into florets
  • 2 TBL EXTRA VIRGIN OLIVE OIL
  • 1 yellow ONION, chopped
  • 2 GARLIC cloves, minced
  • 1 15oz can CANNELLONI beans (Eden), drained
  • 2 C VEGETABLE STOCK
  • SEA SALT BLACK PEPPER, to taste
  • 1/4 C PINE NUTS, toasted
  • 1 tsp BOQUET GARNI

Instructions:

  1. Steam BROCCOLI florets and stems until tender and bright green, about 3 minutes
  2. Heat EVOO in a medium pot over medium heat
  3. Sauté ONION and GARLIC until translucent, about 6 minutes
  4. Add BOUQET GARNI simmer until fragrant
  5. Add BEANS and STOCK and bring mixture to a simmer
  6. Remove from heat and add BROCCOLI
  7. Puree in batches in a blender until smooth or use emulsifier
  8. Season to taste with SEA SALT & PEPPER. Garnish each bowl with toasted PINE NUTS
