Black Bean Burritos

Prep Time: 10 minutes | Cook Time 8 minutes

Ingredients:

  • 1 TBL EXTRA VIRGIN OLIVE OIL or 1/4 C WATER (to water sauté)
  • 1 small ONION, diced
  • 2 large GARLIC cloves, minced
  • 1 RED PEPPER, diced
  • 1 tsp CUMIN
  • 1/2 tsp CORIANDER
  • 1 can BLACK BEANS, Eden brand, rinsed and drained
  • 1/4 tsp SEA SALT
  • 3 TBL CILANTO, minced
  • SPROUTED WHOLE GRAIN TORTILLAS or on a bed of LEAFY GREENS

Instructions:

  1. Sauté ONION and GARLIC for 1-2 minutes
  2. Add the RED PEPPER, CUMIN and CORIANDER, Cover and cook for 2-3 minutes
  3. Add the BEANS, SEA SALT and CILANTRO and continue cooking 5 minutes
  4. In a separate pan, warm the TORTILLA on low flame
  5. Put BEAN mixture on TORTILLA, top with simple GUACAMOLE or chopped AVOCADO, SALSA, BLACK OLIVES, chopped TOMATOES.
