Brussels Sprouts and Blueberry Salad

Brussels Sprouts, Walnut and Blueberry Salad

Prep Time: 25 minutes

Ingredients:

Salad:

  • 1/2 C WALNUTS, toasted, chopped
  • 5 C BRUSSELS SPROUTS, shaved
  • 1 C BLUEBERRIES
  • 1/2 C RED ONION
  • 1 medium AVOCADO

Dressing:

  • 3 TBL EVOO, organic
  • 1 TBL LEMON ZEST
  • 3 TBL LEMON JUICE
  • 2 TBL white wine VINEGAR
  • 2 tsp DIJON MUSTARD
  • 1/4 tsp SEA SALT
Instructions:
  1. Preheat oven to 350 degrees
  2. Spread WALNUTS on a cookie sheet and bake until they are lightly toasted and fragrant, 8-10 minutes
  3. Cool WALNUTS and then chop
  4. Wash the BRUSSELS SPROUTS and chop off the hard stems and remove the leaves that fall off easily
  5. Slice BRUSSELS SPROUTS from tip to tail
  6. Place BRUSSELS SPROUTS in a bowl and break apart any SPROUTS stuck together
  7. In a small bowl whisk together the dressing ingredients until smooth
  8. Add the remaining ingredients and toss together with dressing
  9. Serve
