Chocolate Chunk Banana Muffin

Prep Time: 10 minutes | Cook Time: 15-20 minutes

Ingredients:
  • 3 ripe BANANAS, mashed
  • 3 eggs, whisked
  • 5 TBL organic BUTTER, melted
  • 1 C CASSAVA FLOUR, purchased on Amazon
  • 1 tsp BAKING SODA
  • 1 tsp APPLE CIDER VINEGAR
  • 5 oz ENJOY LIFE MEGA CHUNKS, dairy, nut and soy free
  • 1 tsp VANILLA
Instructions:
  1. Preheat oven to 350 degrees
  2. Grease muffin pan with a bit of organic BUTTER
  3. Mash BANANAS with a fork in a mixing bowl
  4. Stir in the EGG and BUTTER and mix
  5. Add the CASSAVA FLOUR, BAKING SODA, VINEGAR and VANILLA and mix
  6. Fold in the MEGA CHUNKS
  7. Scoop into 6-8 muffin cups
  8. Bake 15-20 minutes
