Portobello Mushroom Burger

Prep Time: 5 mins | Cook time: 6-8 mins

Ingredients:
  • 1/4 C BALSAMIC VINEGAR
  • 1/4 C AVOCADO OIL, cold pressed
  • 2 TBL LEMON, juiced
  • 1 TBL DIJON MUSTARD
  • 3 GARLIC cloves, minced
  • 1 tsp dried THYME
  • 1 tsp SEA SALT
  • 4 PORTOBELLO MUSHROOMS
  • 4 LETTUCE LEAVES
  • 1 TOMATO, sliced
  • 1 RED ONION, sliced
Instructions:
  1. In a small bowl, whisk together BALSAMIC VINEGAR, OIL, LEMON JUICE, MUSTARD, GARLIC, THYME, and SEA SALT
  2. Place PORTOBELLOS in a large resealable BPA free plastic bag or glass pan
  3. Pour marinade over MUSHROOMS and let marinate at room temperature for 30 minutes
  4. Pre heat grill on high
  5. When heated turn grill to medium high
  6. Grill MUSHROOMS until juicy tender 3-4 minutes per side
  7. Transfer MUSHROOMS to plate and top with LETTUCE, TOMATO, and ONION and serve
Notes:

I like to caramelize onions and top with those.
