Quinoa Summer Salad

Serves: 2  |  Prep Time: 15 mins

Ingredients:

  • 2 C QUINOA, cooked
  • 1/2 C RADISHES, chopped
  • 1/2 C CUCUMBER, chopped
  • 1/2 C CELERY, chopped
  • 1/2 C RED ONION, chopped
  • 1/2 C FRESH PARSLEY, chopped
  • 1/2 C RED BELL PEPPER, chopped
  • 2 CLOVES GARLIC, chopped
  • 2 TBL OLIVE OIL
  • 2 TBL RED WINE VINEGAR

Instructions:
Combine all ingredients together in a big bowl. Be sure Quinoa is cool. Mix well.
