Rainbow Colored Salad

Prep Time: 10 Minutes  |  Serves: 4 People

Ingredients:
  • 1 10 oz bag frozen CORN, thawed and drained
  • 3-4 SCALLIONS, sliced
  • 1 RED PEPPER, diced
  • 1 ORANGE PEPPER, diced
  • 1 pint GRAPE TOMATOES, diced
Dressing:
  • 3 PORTOBELLO MUSHROOMS
  • 1/3 C BALSAMIC VINEGAR
  • 1/4 C EXTRA VIRGIN OLIVE OIL
  • 2 TBL grade B MAPLE SYRUP
Instructions:
  1. Make dressing and let sit for 30 minutes. Set aside
  2. Mix SCALLIONS, BELL PEPPERS, TOMATOES and CORN in a large bowl. Toss well
  3. Place a mound of baby romaine on a plate top with mushroom dressing and rainbow salad.
