Rainbow Colored Salad
Prep Time: 10 Minutes | Serves: 4 People
Ingredients:
- 1 10 oz bag frozen CORN, thawed and drained
- 3-4 SCALLIONS, sliced
- 1 RED PEPPER, diced
- 1 ORANGE PEPPER, diced
- 1 pint GRAPE TOMATOES, diced
Dressing:
- 3 PORTOBELLO MUSHROOMS
- 1/3 C BALSAMIC VINEGAR
- 1/4 C EXTRA VIRGIN OLIVE OIL
- 2 TBL grade B MAPLE SYRUP
Instructions:
- Make dressing and let sit for 30 minutes. Set aside
- Mix SCALLIONS, BELL PEPPERS, TOMATOES and CORN in a large bowl. Toss well
- Place a mound of baby romaine on a plate top with mushroom dressing and rainbow salad.
