Roasted Zucchini with Pesto

Prep Time: 5 minutes | Cook Time 20 minutes

  • 4 medium ZUCCHINI, cut into 1 inch chunks
  • 1 TBL organic AVOCADO OIL
  • SEA SALT and freshly ground BLACK PEPPER to taste
  1. Cover a baking sheet with parchment paper
  2. Preheat oven to 475 degrees
  3. Toss ZUCCHINI with OIL and S&P in a large bowl
  4. Spread the ZUCCHINI on the baking sheet in a single layer
  5. Roast for 10 minutes
  6. Turn the Zucchini over and continue roasting for about 10 more minutes, until tender
  7. Return the ZUCCHINI to the bowl
  8. Add PESTO and toss to coat
  9. Serve
