Sausage and Broccoli Rabe
Prep Time: 8 minutes | Cook Time: 15 minutes
Ingredients:
- 1 lb BROCCOLI RABE or BROCCOLI, coarsely chopped
- 2 (4oz) ITALIAN SAUSAGE, hot or sweet, casings removed
- 1/4 tsp freshly ground BLACK PEPPER
- 1 TBL GARLIC, minced
- 1 tsp RED WINE VINEGAR
- 2 TBL EVOO, divided
- 1/4 tsp course SEA SALT
- 1 C RED ONION, thinly sliced
- 1/4 C WATER
Substitution Options:
Top with 1/4 C PARMESAN CHEESE, shaved if desired.
Instructions:
- Cook BROCCOLI RABE in boiling WATER 1 1/2 minutes
- Drain and rinse with cold water, drain well
- Place in a large bowl, set aside
- Heat a large skillet over med-hi heat
- Add 1 TBL EVOO to pan; swirl to coat
- Add SAUSAGE, cook for 6 minutes or until browned, stir to crumble
- Add SAUSAGE mixture to BROCCOLI RABE
- Add remaining 1 TBL EVOO to pan; swirl to coat
- Add sliced ONION; cook 4 minutes or until soft
- Add GARLIC; cook 30 seconds or until fragrant
- Add WATER; cook 2 minutes or until liquid almost evaporates
- Add remaining 1/8 tsp SALT, PEPPER, SAUSAGE MIXTURE and VINEGAR
- Toss to combine; cook 1 minute or until heated
- Sprinkle with PARMESAN CHEESE if desired
