Sausage and Broccoli Rabe

Prep Time: 8 minutes | Cook Time: 15 minutes

  • 1 lb BROCCOLI RABE or BROCCOLI, coarsely chopped
  • 2 (4oz) ITALIAN SAUSAGE, hot or sweet, casings removed
  • 1/4 tsp freshly ground BLACK PEPPER
  • 1 TBL GARLIC, minced
  • 2 TBL EVOO, divided
  • 1/4 tsp course SEA SALT
  • 1 C RED ONION, thinly sliced
  • 1/4 C WATER
Substitution Options:

Top with 1/4 C PARMESAN CHEESE, shaved if desired.

  1. Cook BROCCOLI RABE in boiling WATER 1 1/2 minutes
  2. Drain and rinse with cold water, drain well
  3. Place in a large bowl, set aside
  4. Heat a large skillet over med-hi heat
  5. Add 1 TBL EVOO to pan; swirl to coat
  6. Add SAUSAGE, cook for 6 minutes or until browned, stir to crumble
  7. Add SAUSAGE mixture to BROCCOLI RABE
  8. Add remaining 1 TBL EVOO to pan; swirl to coat
  9. Add sliced ONION; cook 4 minutes or until soft
  10. Add GARLIC; cook 30 seconds or until fragrant
  11. Add WATER; cook 2 minutes or until liquid almost evaporates
  12. Add remaining 1/8 tsp SALT, PEPPER, SAUSAGE MIXTURE and VINEGAR
  13. Toss to combine; cook 1 minute or until heated
  14. Sprinkle with PARMESAN CHEESE if desired
