Spaghetti Squash with Swiss Chard and Bacon
Prep Time: 15 minutes | Cook Time: 50 minutes
Ingredients:
Swiss Chard Salad:
- 2 TBL AVOCADO OIL
- 1 SPAGHETTI SQUASH, medium size
- 4 cloves GARLIC, minced
- 1 bundle SWISS CHARD, chopped
- 8 slices BACON, nitrate free, cooked and finely chopped
- 1/2 C PINE NUTS, toasted
- 2 TBL NUTRITIONAL YEAST, if want a cheesy flavor
- SEA SALT and PEPPER to taste
Instructions:
Cooking Spaghetti Squash:
- Preheat oven to 425 degrees
- Cut the SQUASH in 2 halves, scrape out the seeds and the fiber out of each half
- Brush AVOCADO OIL on both cut sides of the SQUASH
- Place on cookie sheet covered with parchment paper, cut side down
- Bake for 30-40 minutes
- Remove from the oven when it is cooked through and soft, let it cool until you can flip it over and scrape SQUASH out with a fork into a bowl
Cooking Swiss Chard and Bacon:
- Heat a skillet on medium hi heat
- Add BACON and cook till browned on one side and flip and cook until crisp and brown on the other side
- Place cooked BACON on plate covered in paper towel to drain, when cool, finely chop
- Pour bacon grease into a bowl except for 2 TBL and leave that in skillet
- Turn stove down to medium
- Add fresh GARLIC and SWISS CHARD and sauté for about 2 minutes until SWISS CHARD wilts
- Turn skillet to low, add the SQUASH to the skillet and BACON, mix to combine
- Add the NUTRITIONAL YEAST, and SEA SALT and pepper to taste, top with the toasted PINE NUTS
- Serve
