Spaghetti Squash with Swiss Chard and Bacon

Prep Time: 15 minutes | Cook Time: 50 minutes

Ingredients:

Swiss Chard Salad:

  • 2 TBL AVOCADO OIL
  • 1 SPAGHETTI SQUASH, medium size
  • 4 cloves GARLIC, minced
  • 1 bundle SWISS CHARD, chopped
  • 8 slices BACON, nitrate free, cooked and finely chopped
  • 1/2 C PINE NUTS, toasted
  • 2 TBL NUTRITIONAL YEAST, if want a cheesy flavor
  • SEA SALT and PEPPER to taste
Instructions:

Cooking Spaghetti Squash:

  1. Preheat oven to 425 degrees
  2. Cut the SQUASH in 2 halves, scrape out the seeds and the fiber out of each half
  3. Brush AVOCADO OIL on both cut sides of the SQUASH
  4. Place on cookie sheet covered with parchment paper, cut side down
  5. Bake for 30-40 minutes
  6. Remove from the oven when it is cooked through and soft, let it cool until you can flip it over and scrape SQUASH out with a fork into a bowl

Cooking Swiss Chard and Bacon:

  1. Heat a skillet on medium hi heat
  2. Add BACON and cook till browned on one side and flip and cook until crisp and brown on the other side
  3. Place cooked BACON on plate covered in paper towel to drain, when cool, finely chop
  4. Pour bacon grease into a bowl except for 2 TBL and leave that in skillet
  5. Turn stove down to medium
  6. Add fresh GARLIC and SWISS CHARD and sauté for about 2 minutes until SWISS CHARD wilts
  7. Turn skillet to low, add the SQUASH to the skillet and BACON, mix to combine
  8. Add the NUTRITIONAL YEAST, and SEA SALT and pepper to taste, top with the toasted PINE NUTS
  9. Serve
