Tomato Veggie Soup

Prep Time: 10 minutes | Cook Time: 2 hours

Ingredients:
  • 8-12 cups water, cover vegetables with water
  • 2 tsp. basil
  • 2 tsp. thyme
  • 1 tsp. oregano
  • 2 Tbsp. Herb de Provence
  • 3 cloves garlic, minced
  • 6-8 tomatoes, chopped
  • 1 broccoli stalk, chopped
  • 1 large onion chopped
  • 1 leek, washed & chopped
  • 4 red potatoes, chopped
  • 10 carrots, chopped
  • 1 cup cabbage, chopped
  • 1 celery, chopped
  • Fresh basil, dill, parsley or cilantro to taste
Instructions:
  1. Place all the ingredients in a large soup pot.
  2. Cover and bring to a boil.
  3. Turn heat to low and simmer for 2 hours until vegetables are tender.
