Tomato Veggie Soup
Prep Time: 10 minutes | Cook Time: 2 hours
Ingredients:
- 8-12 cups water, cover vegetables with water
- 2 tsp. basil
- 2 tsp. thyme
- 1 tsp. oregano
- 2 Tbsp. Herb de Provence
- 3 cloves garlic, minced
- 6-8 tomatoes, chopped
- 1 broccoli stalk, chopped
- 1 large onion chopped
- 1 leek, washed & chopped
- 4 red potatoes, chopped
- 10 carrots, chopped
- 1 cup cabbage, chopped
- 1 celery, chopped
- Fresh basil, dill, parsley or cilantro to taste
Instructions:
- Place all the ingredients in a large soup pot.
- Cover and bring to a boil.
- Turn heat to low and simmer for 2 hours until vegetables are tender.
